This Rye was developed to approximate the ancent Rye grown in the US in the 18th and early 19th century known as Russian Mammoth White Rye which is no longer available and assumed extinct. The result is an exciting Rye varietal unavailable anywhere else. This is a very light colored Rye and the flavor is outstanding, offering superior spice notes with excellent baking properties but not the traditional dark Rye color.
